Ultimate Blog Party Has Begun!

Aren't you just so excited ? The Ultimate Blog Party has Begun! So take a moment and stop by 5 Minutes for Mom, to see what the hoopla is about. I'll definitely be there!

Here's just a little about me. I've been working from home, as a Virtual Customer Service Representative and just love it. I realize that I this is the perfect work situation for me since I control my schedule, have little distractions and there's no temptations, like candy or junk food around. Oh, I'm asked what is a Virtual Customer Service Rep, at least a few times a day so let me explain. I provide customer service, process sales, and information requests, for a variety of companies. My home office is my 'virtual call center'.

My hubby and I are homebase educating our teenage son. He's enrolled in an Independent Study Program, is very active in sports, volunteer work and his Christian Youth Group.

My husband works for the County Small Claims Court, as a court clerk. He loves the law, his family and the Dallas Cowboys!

Slow Cooking Thursday - March 1

Lowfat Pork Chili

1 medium onion, roughly chopped
1 green pepper, chopped
1 pound pork tenderloin, trimmed, and cut into 1-inch cubes
1 15-ounce can low-sodium black beans, drained and rinsed
1 15-ounce can reduced sodium pinto beans, drained and rinsed
1 15-ounce can crushed tomatoes
1 4-ounce can diced jalapenos, drained
1 tbsp chili powder
1 tbsp cumin

Coat the inside of a 4-quart slow cooker with nonstick cooking spray. Lay onion green and pepper on the bottom. Add cubed pork, followed by beans, tomatoes, jalapenos, and spices.
Cook on low for 6-8 hours. You could serve this with brown rice.

It's Our "Little One's" Birthday Today! Happy Birthday Marcus!

On February 26, 1992, at the Maine Medical Hospital, Marcus Joseph Berry was born at 4:30pm. My husband, just knew it was a boy and picked out the name. (My husband's a Marcus Allen fan....Joseph is my husband's middle name) I really thought I was having a girl. But I've never been more happy to be a mom of a boy.

It's been a joy being mom to our 15 year old son. He's always going to be my 'Little One' even though he's now 6 feet 3 1/2 inches and wears a size 14 mens shoe.

As my husband and I reflect on the last 15 years, we occassionally shed a tear or two and look at all the scrapbooks with huge smiles.

Happy Birthday Marcus! .

Menu Plan Monday - February 26

We're starting this week off with a birthday! Our 'Little One', is 15 years old. (6ft 3 /12 in and still growing) My husband and I will be taking him to one of his favorite eating place's, Khan's. You pick your shaved meats, veggies and noodles. Then you give the bowl over to the cook, who cooks it on these large steel cooking surfaces. You can add a variety of sauces to your combination. It's a great way to sneak veggies into our guy.

Wednesday - Balsamic Vinegar Chicken with Mixed Greens for Marcus
