Slow Cooking Thursday - Jambalaya

Here's a dish that will bring some spice to your week's menu plan.

Now, I would make this with brown rice, to keep it diabetic friendly. Cook rice, on the stove, till al dente and then add with the shrimp. Cooking does vary depending on your crockpot. You don't want to overcook your shrimp. Enjoy!

3 1/2 lbs chicken, cut up

2 onions, diced

1 carrot, sliced

3 garlic cloves, minced

1 tsp dried oregano

1 tsp dried basil

1 tsp salt

1/8 tsp pepper

14 oz can crushed no salt tomatoes

1 lb shelled deveined raw shrimp

2 cups of white rice

Combine all ingredients except shrimp and rice in slow cooker. Cover. Cook on low for 2-3 1/2 hours, or until chicken is done. Add shrimp and rice. Cover and cook on High for 15 minutes or till shrimp are done.

Today is Meatloaf Appreciation Day!

I just love meatloaf. Don't you. It's a comfort food, and you can make meatloaf sandwiches! Yummy! While growing up, we must have had it at least once a week. My mother usually made it with homemade brown gravy, vegetable and biscuits. These days we enjoy a leaner version of this popular recipe.

In honor of Meatloaf Appreciation Day, stop by for your choice of meatloaf recipes. What I like about this website is the customer feedback. You can read what others have to say about a recipe before trying it. Some even comment about changes that made to the recipe to make it better. So, get cooking!
