Menu Plan Monday- November 10

Little One - 6ft 5inches and still growing!

Today's news is sad to take. Circuit City files for bankruptcy and DHL is laying off employees. And of course, we don't hear about the smaller businesses closing their doors.

My daily prayers, include all Americans, to keep their faith strong and close. We will get through this and it will make us stronger.

Now onto the better news. The Nellis Air Show 2008 was absolutely fantastic. It's was a pleasure working with Nellis AFB Marketing Department, meeting the other vendors and of course the crowd. Our son, Marcus has announced that he's signing up with the Air Force, as an officer. He's also planning on expanding his philanthropy, after he's more financially successful. His charity will support middle and upper middle class homeless.

My pain management has been an issue so while I'm dealing with that the guys are cooking...or not!

Chicken Stir Fry

Healthy Sloppy Joes and Carrot Sticks

Chicken Pasta with Roasted Red Peppers

Subway Sandwiches

Veggie Soup and Sandwiches

I agree that we need to keep our country in our prayers as we see businesses big and small in trouble, but the real trouble is the individual that loses their job. Here in New England even (that should be underlined) the casinos are laying off people!

On another subject....your BABY is 6 foot 5?!

Enjoy your week!

Hi There,

Thank you for stopping by my blog. The recipe I use for meatloaf muffins is so simple and they are so good.

Meatloaf Muffins

1lb lean ground beef
1 box herb flavored stove stop stuffing
2 egg whites
1/2 cup water

Mix all the ingredients together. Place in muffin tins and bake at 350 degrees for 20 to 25 mins. Sometimes the time varies depending on how big you make them.

Hope you like them. Let me know what you think when you try them if you get a chance.

Bright Blessings

We are facing a layoff starting next week. DH works for the auto industry here in Detroit. Not a good place to be right now!

Your menu looks great! And I only hope my son hits the six foot mark someday! He's a little on the short side right now!

It's very scary out there, isn't it? I can't believe DHL. Circuit City is closing all their stores in our area. My husband's been forced to take a pay cut, of course no work cut. I really hope the future's brighter.

That's awesome about your son and the Air Force.

Your menu sounds delicious. I hope your pain gets better soon.

Thank you so much for buying popcorn from my son. It will help him participate in scouting activities throughout the year. He was very excited when I told him someone had ordered from him.

Thanks for stopping by my blog. Yes, I loved the Chicken Taco Soup. Any Mexican style food is usually a hit in our home. Congrats on your son going into the Air Force. I have a lot of family and friends that have served or are still serving in the military including my husband (who's a civilian now). I have a ton of respect and admiration for those who do. That's so sweet of the guys to take over a little of the cooking for you. I hope that you are feeling better soon.
