Hash Brown Casserole recipe courtesy of Cooking Light
Charles and I had to get up very early this morning to make our 5:30am county social service appointment. I'm hoping to get approved for prescription assistance. My migraine medication is over a $1000! And I have no way of paying for it these days!
This week, we'll be busy baking cookies and cake for the Harvest Festival Cakewalk. I'm also volunteering for the volunteer check-in table.
Charles' part time hours, at Kmart, are being cutback by next month. We're hoping he'll be able to get his unemployment benefits again.
We picked up our first order from Angel Foods Ministries on Saturday. So far, we're very impressed with the quality.
Thanks to Organizing Junkie for hosting MPM! Now onto this week's
Chicken Fritters, Potato Salad
Beef Stew
Chicken Breasts with Roasted Vegetables
Oven Baked Fish, Mixed Vegetables, Mac N Cheese
Hash Brown Cassorole with Bacon, Onion and Cheese courtesy of Cooking Light, Mixed Green Salad

I haven't done MPM in soooo long. Thanks for the Cooking Light link. I pray that all goes well for you all.
Thanks for stopping by my blog.
I hope everything goes well for you and you are able to get the assistance you need for your medication.
Are you finding that you are using everything in your Angel Food Ministries box? My husband is so picky, I'm worried we'd end up donating a lot.
Oh, yum! We love hash brown casserole and how great that it is light! I'll have to try that one!
I'm glad you hear that you've had a positive experience with Angel Food Ministries. I have considered trying it out several times but so far haven't taken the plunge.
Thank you for the comment on my blog. Enjoy your week in meals and your Harvest Festival weekend. Looks tasty!

Hi Rona,
Thank you for stopping by my blog and leaving your note :)
The hashbrown casserole looks yummy, might have to put that on my menu for next week. I want to know more about the chicken fritters! I got gobs of chicken we need to eat up.
I hope you can get the prescription assistance too :) Just wondering, have you asked your Dr. for samples? I mentioned to my son's Dr. that his athsma prescription (that has no generic) was really expensive and he gave me a 2 month supply and told me to call when we needed more. I learned that it doesn't hurt to talk to the Dr. about these things, they don't want you to suffer either.
Hope to see you next week :) Take care!
That casserole looks great!
Thanks for stopping by - your menu looks wonderful! Praying for God's abundant blessings for your family!
Great Menu! I really like the Hash Brown Cassorole. We are going to need to try that one. Thanks for the link.
You've got a yummy sounding week planned.
My husband lost his job las Oct. and we didn't qualify for any help. No food stamps to help feed our kids. Oh, we were able to get medical for our kids, but my husband and I were out of luck. Real nice considering I am diabetic. His company did give him one month paid COBRA, so when I knew it was getting ready to end, I got a 3 month supply of all my meds and testing supplies. Of course, we could have continued COBRA, but it was over $1000 a month!! Right, we just lost our only source of income and we can afford that!! My husband did get unemployment, but it didn't even cover our mortgage. It was tough times, but it all worked out because in Feb (after 3.5 months of no job), he got an even better job than the one he lost. Amazing really!
We utilized Angel Food and really liked it. The only reason we aren't using it right now is because our freezer is packed (we bought some meat in bulk from a local company). Once we start to run low in our freezer, we'll be back to Angel Food!
Thanks for visiting my blog! :) Your menu looks yummy too. :)
Wow, I'm loving that casserole...all my favorite ingredients!
Thanks for stopping by my blog! I hope things went well with getting the prescription assistance. Have a great week!

I'm definitely gonna have to try out that casserole dish, it looks scrumptious!! :)

P.S. Thanks for your warm welcome to Menu Plan Monday!
Wow - I hope that things work out for prescription assistance. I deal with migraines too, and when you have meds that help, it certainly makes life a little easier.
