I'm not sure what shelf milk is, but I do use powdered milk, reconstituted, in a lot of recipes and have not noticed any difference. I know you can also reconstitute evaporated milk, I think you add equal amounts water and evaporated milk and use that as well.
I love Angel Food, this is where we got our Shelf milk before... I got your comment on my blog and posted there and here. I use it exactly like milk. In the past I have used it in pancakes, mashed potatoes, and an egg casserole recipe I had. Angel Food is so great!!! :)
I have heard of Shelf milk. Once opened you put it in the fridge. I love it for baking and it helped in the past when we had a grocery budget of 50 dollars a week. I didn't care to drink it much and even our daughter wasn't a fan so it was best to cook, it was also a little thicker than the milk I buy so it was great in mashed potatoes, and things like that!
