Charles and I love Chipotle Mexican Grill . The burritos are amazing. I love the chicken or pork with cilantro lime rice, black beans, guacomole and medium salsa. The burrito will fill me up for the whole day!

Autumn Weather Has Finally Arrived in Vegas!



As I was walking to the gym today I noticed that there a cool breeze in the air. The sun wasn't burning. It's autumn in Las Vegas!

Time to Reorganize My Home Office Space



Since Charles has been busy setting up his home office space I feel it's time for me to reorganize mine. This will be a good project for my day off.

Things to Do:
The cords need to be re-ran and labeled.
reorganize the desk.
Clean out organization box.
Sort through files.

First of all, I want to do a Big Shoutout to Workplace Like Home members! One of the team posted her experience with purchasing a corded phone with headset jack and lots of bells & whistles from Pappas Bargain, for a very low price, as positive!

Since Charles required a corded phone with headset jack for his work at home job I thought I would give it a try.

I found a corded phone that retailed at $120 for $14.96 plus 10.98 shipping. The phone was delivered via UPS. We immediately plugged in a phone cord and tested it. The we plugged in the headset and made some test calls. Works great!

Mammogram Results Normal ! Breast Cancer Awareness Month


In the back of my head there's concern after having a mammogram. So when I saw a letter from the imaging company I immediately open it. I was thrilled to see in capital and bold letters NORMAL.

Remember to schedule and have your mammogram.

Two Years Ago We Renewed Our Vows!


Charles and I renewed our wedding vows in Las Vegas on October 12, 2008.

We had several difficult years while living in San Diego. When we moved to Las Vegas, for a fresh start, we were blessed to find work as Self Storage Property Managers and live in a free rent apartment.

I'm so glad that we made the time to renew our vows. And that Marcus was such a big part of it.

To many more years with my favorite guy.

Menu Plan Monday - October 11, 2010



I had my pain management doctor write a prescription for a TENS Unit last week. I've been having some problems with managing my pain level and don't want to increase or change my pain medication.

Marcus and Kiana decided to head into Las Vegas and visit with friends today. It's always strangely quiet and clean when they're not home.

We still have food left from our Angel Food Ministries order. Not bad for spending $153 last month.

Now, onto this week's menu plan. Thank you to Organizing Junkie for hosting Menu Plan Mondays.

Ground Turkey with Sauteed Tomatoes, Onions, and Red Pepper and Cheese Ravoli

Honey BBQ Chicken Thighs, Greens Beans and Stuffing

Baked Ham, Cauliflower, Mixed Green Salad with Feta

Vegetable Soup and Grilled Cheese Sandwiches

Beef Stir Fry with Veggies, Brown Rice

Sweet Bacon Wrapped Pork Loin - Allrecipes

I recently received a request for this recipe so here it is! Thanks to Allrecipes!

Oh, the original recipe does include 2 tablespoons of raisins but I left them out.
If you make it please let me know how you and the family enjoy it!

1 (3 pound) boneless pork loin
salt and pepper to taste
8 slices bacon
2 tablespoons honey
2 tablespoons balsamic vinegar
2 tablespoons dry red wine
1 sweet onion, minced
1 tablespoon chopped fresh rosemary

Directions
1.Preheat oven to 375 degrees F (190 degrees C). Line a shallow roasting pan with aluminum foil.
2.Season pork loin with salt and pepper. Wrap the bacon slices around the pork loin and secure with toothpicks. Preheat a large skillet over medium-high heat, then add the pork loin. Cook until golden brown on all sides, about 10 minutes, then place onto roasting pan. Stir together honey, balsamic vinegar, red wine, onion, and rosemary in a small bowl; spread over pork loin.
3.Roast the pork loin in preheated oven for 15 minutes, then sprinkle with raisins. Continue cooking until the internal temperature of the pork loin reaches 160 degrees F (70 degrees C), about 15 minutes more. Remove from the oven, and allow to rest for 5 minutes before removing toothpicks and slicing.

Mexican Tortilla Soup - Mr Food's Quick & Easy Diabetic Cooking

This is one of my husband's favorite soups...and it's diabetic approved! The family loves the flavors. I will sometimes finish this soup off in a crockpot. That way everyone is guaranteed a hot bowl of soup.

Mexican Tortilla Soup

1 tablespoon vegetable oil
1 lb boneless,skinless chicken breast, cut into 1/2 inch chunks
1 red bell pepper, coursely chopped
3 garlic cloves, minced
3 cans (14.5 ounces each) ready to use reduced sodium chicken broth
1 package (10 oz) frozen whole kernal corn
1/2 cup salsa
chopped fresh cilantro
broken up backed tortilla chips

In a deep pot heat the oil over medium heat. Add the chicken, bell pepper, and garlic. Cook for about 3 minutes or until the chicken is browned on the outside, stirring frequently.
Sitr in the chicken broth, corn and salsa: bring to a boil. Reduce the heat to low, cover and simmer for 5 minutes or until the chicken is no longer pink.
Serve in bowls, sprinkle with cilantro and tortilla chips.

How Does Our Garden Grow - Post 2

Charles,the hubby, is really enjoying maintaining our patio garden. He's out there everyday, checking the growth, watering, sweeping and enjoying being a gentlemen farmer.

Charles bought a Topsy Turvy this weekend, along with Strawberries and Cucumbers.
