Ham and Cheese Potato Casserole to The Rescue!

I really enjoy cooking but haven't had much of an opportunity with my pain flare ups. So, when I found that I was up to it yesterday I broke out the crock pot, grabbed the potatoes, leftover ham and broke out my cookbooks.

The winning recipe was Ham and Cheese Potato Casserole!

Peeled and evenly sliced potatoes, 6 large potatoes (amount varied)
2 cups cubed fully cooked ham
3/4 cup shredded Cheddar cheese, divided
1 small onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 (10.75 ounce) can condensed cream of celery soup, undiluted
1/4 teaspoon pepper

I then start my layering of ingredients, starting with some soup first then potatoes, ham, cheese onion and then repeat till I run out. The recipe doesn't call for water but I do add half a cup so things don't stick.

Charles loved it so much that he requested seconds. To round it out we had mixed vegetables.

Enjoying "All Creatures Great and Small" on Netflix

This was a series that I got hooked on while living in Portland, Maine. Every Sunday, I watched the trials and misadventures of the staff of a country veterinary office in 1940's Yorkshire, on the PBS channel.

James Herriot is a vet in Yorkshire, England, during the 1940's. He is assigned to the practice of Siegfried Farnon, who already has a successful vet business. James undergoes a variety of adventures during his work, which are just as often caused by the characters of the county (including the Farnon brothers) as the animals in his care.

These days I can enjoy it anytime on Netflix Watch Instantly.

Amazing News! Charles Got a Job Offer From Century Link!

I shared a link to this job on my blog. Little did I know that my husband saw it and decided to apply!

He had a phone interview this week, they checked his references and then the job offer showed up in his email yesterday!

We're so proud of him!

Dell Call Center Reps Have Been Sent Home to Work

It looks like another company has made the decision to close their brick and mortar call center and send their reps home to work. The chosen reps receive a $1500 stipend to outfit their home office or space. Dell also is providing high-speed internet, laptop, monitor and other necessities. And that's not common in the work at home industry.

I believe we'll be hearing more companies making this decision to save money.
