Fibro what we live everyday

I hope this will be helpful to Fibromyalgia sufferers, their friends, families and co-workers.  Our pain is real.  It never takes time off.  And it can be disabling.  I pray that one day we will find a cure.

I don't see many decorating articles geared to those of us who rent  or live in military housing.  So, when I saw this article on Better Homes and Gardens Facebook page I had to read it!

One of my favorite ideas is using pretty scarves to decorate those ugly ceiling lights.  We have one in our dining area so that's got me thinking I need to head to the nearest thrift shop and go on a hunt!

I also love the use of colorful storage bins, baskets and boxes.  I have great luck at our local Big Lots but you maybe able to scoop some up at garage sales and thrift shops.

And if you're short on seating check out this no-sew project.  All you need is some foam cushions, fabric and a hot glue gun!

Journaling Time: A Family Keepsake

This family journal is different then my scrapbooking projects.  Unlike posting photos with various embellishments and chosen words our family journal has various topics like family sports, community support and places to write a letter to each other.  It's a journal that one would continue to add to over many years.

I've had this journal since our days in San Diego.  It's full of funny stories and moments we shared like why we call Marcus, Little One.  And why Charles is the go to guy for history questions.  As well, as our times spent with Kiana and Toby, the Wonder Dog.

One day I'll pass it on to Marcus, in hopes he'll continue the practice with his family and to share with them our family story.

Greek Grilled Chicken and Vegetable Salad with Warm Pita Bread

Summer is officially here and so are those hot Las Vegas temps!   All I want to cook is something light, easy and delicious without breaking out in a sweat!
Greek Grilled Chicken and Vegetable Salad with Warm Pita Bread for Wrapping - Rachel Ray

1 1/3 to 1 1/2 pounds chicken breast tenders, 2 packages from meat case
Salt and pepper
8 pita breads
1 ripe lemon, zested and juiced
3 tablespoon red wine vinegar, eyeball it
1/2 cup extra-virgin olive oil, eyeball it
2 tablespoons fresh chopped oregano, 4 stems, stripped of leaves and chopped
3 cloves garlic, chopped
2 hearts Romaine lettuce, chopped
1/2 cup pitted Kalamata olives, coarsely chopped
8 ounces feta cheese, crumbled
2 vine ripe tomatoes, seeded and diced
1/3 seedless or English cucumber, diced
1/2 red onion, chopped
1/2 cup flat leaf parsley leaves, a couple of handfuls, chopped

Preheat grill pan over high heat. Place chicken in shallow dish and season with salt and pepper.

Preheat oven to 275 degrees F. Wrap pita breads in foil. Place in warm oven and heat until dinner is served.

Combine lemon zest, juice and vinegar in a bowl and whisk in oil. Add oregano, garlic and whisk again to combine into dressing. Pour half the dressing over chicken tenders. Turn tenders in dressing to coat.

Combine remaining salad ingredients in a bowl. Pour remaining dressing over salad and toss well. The salad should be very lightly dressed. Season salad with salt and pepper and transfer to a large serving platter.

Grill tenders 4 to 5 minutes on each side. Transfer hot tenders to the salad lined serving platter. Remove pitas from oven and unwrap. Cut pitas in half and arrange around the edge of platter.

To serve, each person can pile grilled chicken and veggies into pita halves, wrap up on either side and enjoy!

Many years ago, I prayed that the Heavenly Father would bless me with a good husband and father for my child.  And He answered my prayers with you. 
When Marcus recently told me he knew you weren't his bio dad but didnt care because you're his Dad I cried. 
You and I have a raised an amazing young man who is aware and caring of his community.
Thank you Charles for being part of our lives.  And thank you Heavenly Father for continue to give us great gifts everyday!
