Our Apartment Kitchen - November 2011

One of the things that I love about our kitchen is that it's connected to a laundry room. It makes it so easy to put dirty dish towels, dish cloths and napkins right into the washer machine!

I love shopping at Etsy! One has an endless source of creative artists to pick from. You can actually speak with the owner and request custom pieces. You definitely can't do that at Target!

Show Us Your Life at Kelly's Korner: Older Mom Bloggers

Yes, I do consider myself an older mom blogger! I'll be 50 years old in January 2012. Marcus is 19 years old and talking about leaving the nest. And my husband, Charles and I are planning our future as empty-nesters.

This year, I've been re-discovering "Me" after many happy years of dedicating myself to parenting our son.

My husband has announced that he's courting me all over again. Sometimes he treats me to a bouquet of flowers, lunch out and recently a new coat!

This is a great time in our lives!

My favorite waffle creation featured is the Fried Chicken and Waffle at Harvest Restaurant in Kentucky.

At home, I like to make my waffles from scratch using the Betty Crocker Red Cookbook recipe. For toppings we love fresh strawberries or blueberries or sugar free syrup.

I'm Going to Give This Recipe a Try! Sweet Potato Casserole ~ Martha Stewart

  • 3 pounds sweet potatoes (about 8), peeled and cut into 1-inch chunks
  • Coarse salt and ground pepper
  • 1/2 cup whole milk
  • 4 tablespoons butter
  • 1/2 teaspoon ground nutmeg
  • 2 cups mini marshmallows or chopped regular marshmallows


  1. Preheat oven to 375 degrees. Place sweet potatoes in a large saucepan, and cover with cold water by 1 inch; salt generously. Bring to a boil; reduce to a simmer, and cook until easily pierced with the tip of a paring knife, 15 to 20 minutes. Drain, and return to pan. Heat over medium, stirring, until liquid has evaporated and a thin film covers bottom of pan, about 2 minutes.
  2. Remove pan from heat; add milk, butter, and nutmeg. Mash until smooth; season with salt and pepper. Transfer sweet-potato mixture to a 2-quart baking dish. (To make ahead, refrigerate, up to 1 day.)
  3. Top casserole with marshmallows; bake until center is warmed through and marshmallows are lightly browned, 15 to 20 minutes.

Consumers who have the recalled product should stop using it immediately and contact the company's consumer services department at 800-335-6839.

Bidding On Storage Units: Q&A With The Hubby

This morning my husband, Charles read to me, a news story, that a man had found $500,000 worth of gold and silver after winning a bid on an abandoned storage unit.  

A few years ago, my husband and I were Self Storage Property Managers in Las Vegas.

I decided to have a Q&A with my husband about Storage Auctions!

Me: " How was your experience attending storage unit auctions different then what is shown on "Storage Wars"?

Charles: "The big difference is the show likes to focus on the quality units."

Me:  "Please explain".
Charles:  "People can make the mistake in thinking that every storage unit is a treasure chest...the opposite is true."  "In fact, 95% of units sold at auction is junk...old cheap furniture, out dated electronics, moldy clothing and trash are usually the norm"!

Me:  "Okay, but we've actually purchased or been given items from auctions. Don't you still think they're worth attending"?
Charles:  "If you're looking for tools, household items, etc you might be able to make a deal with the winner of the unit."

Me:  "Yes, do you remember Marcus getting that old green recliner from an auction"?!
Charles:  "His captain's chair"!

Me:  "So, you don't think people should be grabbing their trucks and heading into this as a way to make a living"?
Charles:  "It doesn't cost anything to attend and observe an auction.  I recommend going to a few your local area.  Listen, look and ask questions. 

Me:  "What should people bring with them if they plan on participating in a storage auction"?
Charles:  "You need to have debit or credit cards or checks here.  You'll need a truck or trailer...sometimes you can rent one at the storage facility but don't count on it. Most storage facilities only give you 24hr to remove the items. A powerful flashlight so you can view things inside the unit.  Remember, in Nevada, you can't enter the unit."  "Oh!  And don't forget a lock"!

Me:  "What was the best find that you saw at an auction"?
Charles:   "A guy spent $250 for a 10x10 storage unit.  The unit had a complete Mac tool set and rolling tool box..estimated cost $5000"!

Me: "What was the weirdest find"?
Charles:  "A woman's ashes"!

Sometimes You Need to Take a Break From Work: Chronic Pain Sufferer

After many months of thought I've decided to stop working full time.  My neck pain has just gotten beyond words and with the demands of my job I found that I could no longer continue. 

When I spoke with my husband about it he felt it was time.  He's seen how much weight I've loss and the increased pain on my face.  Our son has been asking me when I would step down for months.

Chronic pain sufferers will tell you that constant stress and negativity can make our pain worst.   

It's coffee time!
It certainly does help that my husband has full health, dental and vision through his job.

If you haven't clean your fridge this month you may want to set aside some time today since it's National Clean Out Your Fridge Day!

It's not my favorite housekeeping task.  Thank goodness I can usually talk my husband or son into cleaning it.

"Law & Order" Season 1-8 Available on Netflix

I was so surprised to find that Netflix finally got the licensing for the original "Law & Order" Seasons 1 to 8 episodes!

This is great news for L&O fans.  Here's hoping they get the remaining seasons!
