Menu Plan Monday ~ June 25, 2012

It's another week of 100+ temps in Las Vegas so if I can make a meal that doesn't require the oven I will! This week, we'll be having BLTs, make your own salads, fried shrimp with mixed greens salad, meatloaf with mashed potatoes and salad, crock pot pot roast with mashed potatoes and green beans. oh i hate when temps get so high! here in NY we had near 100 temps last week, but with humidity - it felt even worse.
Hope the week cools off for you at some point!

We did the BLTs tonight as well. Sadly, our lettuce in the garden has become bitter in this heat. So we replaced the lettuce with sliced cucumber. My husband thinks he likes it better.

Thanks for stopping by! The side dish with the Pineapple Chicken Teriyaki Sandwiches is actually my Grandma's Potato Salad. It is definitely a family favorite and a recipe I hope to post soon.
Your menu looks delicious, especially the BLTs. That's a dish that sadly gets overlooked most of the time in our house.
