I've been watching Mary Ann Esposito's Ciao Italia for more than 20 years, on PBS and Create. I love her use of simple ingredients that produce lots of flavors. Yum!

Have you discovered how delicious chicken thighs are? Moist and tender and cooking in no time, they are the inexpensive alternative to pricey chicken breasts or cutlets.
Here is what I do with them; shake them first in flour seasoned with salt and pepper. Then brown them quickly in a little olive oil in a stove top to oven type casserole.
Add a medium sliced onion, a couple of carrots, roughly chopped and either a couple of diced potatoes or 1 1/2 cups of gnocchi as I have done here.
Pour 2 cups tomato sauce mixed with 1/2 cup red wine over the casserole.
Cover and bake in a 325F oven for 35-40 minutes. A great one pot meal served with salad and fresh bread.
