BerryMorins Chicken and Dumplings

Marcus was in charge of brown and seasoning the chicken and vegetables. He did add poultry seasoning, along with salt and pepper before placing in a 300 degree oven.
I made the dumplings according to the recipe. Next time I'll make less dumplings because we ended up with too many to use. Note to self: buy a rolling pin

After removing from the oven, Marcus separated the chicken from the bones. Second note to self: Next time save the carcass to make homemade chicken broth.

The finish product was delicious! Marcus and I have fun cooking together, especially new recipes. Marcus even raved how much he loved it! This is going to make a delicious surprise for hubby when he comes home from work.

On a windy and cold day in Las Vegas it's not surprising that my husband would request Chicken Noodle Soup for dinner!

But when I saw Mommy's Kitchen's Stewed Chicken and Dumplings I decided to surprise my family !

Of course, our son, Marcus will be provided prep assistance.

Bye-Bye Century Link! Hello Cox Internet!

Since I'm no longer working for Century Link there's no need for their DSL service!

We already have Cox Cable Internet in Marcus' room but we needed to network the signal.

We purchased a Belkin N300 wireless router and an adapter, at, last night. By the time Charles arrived at the store it was ready for pick up.

This morning, Marcus, our tech guy and son, installed the program on the desktops.

You know? I actually forgot how fast cable Internet can be!

Chicken and Vegetable Stir Fry for Lunch

Ever since I stopped taking opiates my appetite has been affected. Sometimes it takes more than just being hungry to get me to eat. Eye appeal has become much more important.

I just threw this together yesterday with leftover chicken and mushrooms and some frozen fire roasted potatoes and vegetables. The frozen fire roasted potatoes and vegetables are seasoned with rosemary, garlic and olive oil are available from Schwans.

The combinations smelled so good Marcus asked me for a bite!

My Latest Buzz Cut ~ "Look at All The Gray Mom"!

I wanted to get to SuperCuts early so I wouldn't have much of a wait. My timing was perfect because when I walked in there was a chair ready!

I decided to just have my usual, buzz cut, done. The hair stylist did a fantastic job!

Etta James, Singer, Passed Away ~ "At Last"

My husband stuck his head into the shower and informed me that Etta James had died. It wasn't much of a surprise due her admittance to the hospital for multiple conditions, including leukemia.

I will always remember the Valentine's Day that my husband treated us to tickets to see her perform in Las Vegas. She walked out to the stage, with assistance, sat down and the stool and began sharing stories and belting out some tunes.

Unfortunately, the show was stopped early due to her declining health and the tickets were refunded.

When my husband and I took to the dance floor after renewing our wedding vows, 3 years ago he had them play "At Last" by Etta James. We just love the words of that song.

We pray that Miss James' family and friends will find comfort in the fact she is now at peace. We will truly miss her.

Target Pharmacy's $4 Generic Prescription Plan

Due to a paperwork error I will have to wait till November's health plan enrollment to be added to my husband's health insurance plan. In the meantime I needed to find the most affordable prescription plan in my area.

Before my doctor's appointment today I went to the Nevada Drug Card website, click on the price comparison for each of my medications. My local Target pharmacy came up with the lowest price!

When I arrived at Target, Josh, the pharmacist, was very friendly and informative when I informed him I had no health insurance. He took the time to verify that my medications were on their $4 Generic Prescriptive Plan. Josh even took the time to input my information into their computer system. I was than informed that the scripts would only take 20 minutes to be filled. I was thrilled!

When I came back to pick them up they were ready with 2 minutes to spare! And since I'm now going to be a regular Target pharmacy customer I signed up for their Pharmacy Rewards Plan. After filling 5 eligible prescriptions I will receive 5% off a day of Target shopping. Very cool!

I've Started My SSDI Claim Today

After a short discussion with my husband we have decided that I will not be returning to work. It's time to start listening to my body.

I've contacted a law firm to file my Social Security Disability Insurance claim today. They'll take care of the initial filing and process, for me.

Time will only tell how long it will take for me to receive my benefits. Some people get approved within months and others take years.

In the meantime, I will continue to see a primary doctor to keep my medical records updated. I also need to consolidate my medical history for the last 11 years. (that will keep me busy)

I would also love to hear from those of you that have had experience with filing a SSDI disability claim. Please feel free to share your comments.

Happy 100th Birthday LL Bean!

When we moved to Portland, Maine, in 1976 I never saw a Bean boot before. Despite their popularity around town, I actually remember thinking these were ugly boots.

The boots are designed for warm and keeping your feet warm. I remember after "borrowing" my sister's Bean boots I immediately fell in love.

I have fond memories of my husband taking me to Freeport to tour LL Bean's flagship store when we were dating. It's definitely worth the trip to get a photo of the Big Bean boot!

This is a company that has always believed in provided a quality product and great customer service! Happy Birthday LL Bean!

The Martha Stewart Show Has Been Canceled on The Hallmark Channel

After lower viewers and high production it appears The Hallmark Channel has decided to pull the plug on The Martha Stewart Show.

I was never a fan of the live audience format. My favorite was the classic shows when one felt Martha was just showing you the proper way to iron a shirt or clean your heirloom linens.

It didn't help that Cox Cable moved The Hallmark Channel to their digital line up. I wasn't going to pay extra just to follow Martha.

I don't think Martha will be leaving us entirely. We'll still have her Sirius/XM show, magazines, products and website.

I'm Making a Bundt Cake! Yum!

Remember when Bundt Cakes were all the rage in the 70's? Well, I guess they're still popular because when I Googled bundt cake recipes I found thousands of results.

I decided to make a Vanilla Bundt Cake. Now I just need to locate my Bundt pan.

Menu Plan Monday ~ January 16, 2012

I'm still in a Clean Up and Organizing State of Mind this week. On the list of task for this week are organizing Charles' work papers, sorting and filing last year's medical receipts. That should keep the shredder busy.

I also want to stock up on the paper towels, toilet paper, and other household items. After Marcus did some re-organization in the hallway bathroom we now have lots of empty storage.

Enough about onto this week's menu plan!
