Extra Crispy Spicy Fried Chicken ! Marcus Approved!

I recently saw an episode of Cook's Country where they made a batch of Spicy Fried Chicken. Since I didn't have a premium membership I wasn't able to get their recipe but that didn't stop us!

We did some searching and discovered this one!

Now, we did double dredge our chicken. Something we learned on Cook's Country, flour your chicken, let sit while oil is getting hot, you'll notice chicken gets gummy, re-dredge in flour before placing in oil. (it works)

Marcus, our son, gave this chicken recipe 2 thumbs up!

Conquer Chiari Walk Across America, This Saturday, Las Vegas!

The Conquer Chiari Walk Across America is an annual fundraising and awareness event comprised of a series of local walks held on the same day.

In 2011, the event was held at 47 different locations, involved more than 5,800 participants, and raised over $405,000. We are proud to say that 83% of the money raised will be used directly to fund research projects and that only 17% was required for overhead and expenses. This year the walk will be held on September 22nd, and it is our goal to raise at least $450,000 for research.

I'm walking in support of our friend, Christine Smith, host and Chiari sufferer. This chronic pain condition is rare and can be fatal. Stories of Hope and Recovery ~ Attempted Suicide

I had to discuss the day I attempted suicide in therapy.  Man, was it difficult to say these things out loud.  Afterwards my therapist asked what I thought about that girl.  My answer, "I'm a mess".  Her reply, "God has a plan for you.  2 years later you're still here"!

Yes, I'm still here.

I'll Be Attending My First Blog Conference Next Week!

I recently won full access tickets to BeBlogalicious next week, at Vegas Bloggers, at the Red Rock Casino and Hotel, in Las Vegas.

This will be my first blog conference so I'm really excited to see what all the hoopla is about. Since the conference starts next Friday I've started looking at the conference schedule, considering what I'm going to wear and what I need to bring.

If you have experience attending blog conferences and would like to share some tips please do!

Window Shopping at Big Lots with the Hubby

Last week my husband and I did some window shopping at Big Lots. We just love this store.
Can you believe they already started stocking the Christmas items?
Peach salsa? Maybe we'll give it a try!
My husband and I love this dinnerware pattern. And we're in need of a new dish set.
I think I might purchase some new bed sheets and pillows on my next shopping trip to Big Lots.
My husband loves testing out the recliners but currently we don't have room in our apartment for one.

Big Lots Stock Up Shopping!

This Friday, I went to Big Lots and did our stock up shopping alone. Marcus wasn't feel well so he stayed home. I still managed to do very well without him. When I had to reach for the Martha Stewart dishwasher liquid, from the top shelf, I asked for help. I bought all of them!
I found this 8x8 scrapbook kit for $3! Big Lots has great prices on scrapbook supplies!
I've been wanting some of these chalkboard circles from Etsy but Big Lots has them for $8.00 (there are dry erasable circles inside the box too)
My budget was $120 and I spend $111.00 so not bad. I decided I deserved to treat myself to a Skinny Mocha Frappuccino at Starbucks.

Menu Plan Monday ~ September 17, 2012

I'm currently following The Prudent Homemaker's meat, poultry, beef no more than $2 @lb rule. I was able to purchase ground beef, chicken thighs, pork chops, pork shoulder, chicken breasts and drumsticks at Vons! And as usual, I used Vons grocery delivery and saved $3 on the delivery charge!

Tonight's Dinner: Deep Dish Chicken Pot Pie

Deep Dish Chicken Pot Pie recipe, courtesy of Kraft Foods, is considered a lighter recipe because you're using Neufchatel Cheese, fat-free reduced sodium chicken broth and just 1 pie crust than the traditional chicken pot pie! I did make some changes based on the reviews, such as bland taste. I've mentioned my changes within the recipe below.

1 lb. boneless skinless chicken breasts, cut into bite-size pieces

1/4 cup KRAFT Lite Zesty Italian Dressing

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed

2 Tbsp. flour

1/2 cup fat-free reduced-sodium chicken broth

3 cups frozen mixed vegetables (peas, carrots, corn, green beans), thawed, drained

1 ready-to-use refrigerated pie crust (1/2 of 15-oz. pkg.)
I used fresh vegetables, carrots, green beans, onions, lima beans, zucchini, sauteed in extra virgin olive oil, add poultry seasoning, salt and freshly ground pepper
I removed the vegetables and placed in a bowl. Added the chicken pieces, lightly browned with extra virgin olive oil, added vegetables back with flour, cream cheese and organic low sodium chicken broth. Used same measurements and cooking directions as per the recipe!

HEAT oven to 375°F.

COOK chicken in dressing in large skillet on medium heat 2 min. Add Neufchatel; cook and stir 3 to 5 min. or until melted. Stir in flour until well blended. Add broth and vegetables; stir. Simmer 5 min.

POUR into 10-inch deep-dish pie plate; cover with pie crust. Seal and flute edge. Cut slits in crust to permit steam to escape.

BAKE 30 min. or until golden brown.
Time to enjoy!

I attended a Twitter chat party recently for healthy eating and won a copy of The Plant-Powered Diet by Sharon Palmer, RD!

A healthy balanced diet is part of my pain management plan, as well as improving our family diet. I'm also looking forward to making some of the recipes like the Home-styled Hummus and cooking whole grains, such as quinoa, barley and millet from this book.

Here's a side story of how we got Marcus to eat hummus. We were at a Greek restaurant, enjoying our hummus and pita bread. Marcus was 2 yrs old, points at the bowl and says, "What's that"? My husband told him that it was peanut butter. 18 years later, he still loves his hummus, especially homemade.

My Target Purchases ~ September 2012

Don't you just love tar-ZHAY, aka Target! But I love it even more when I can find a bargain there!
On the clearance rack I found a pair of shorts and a pencil skirt for $5.38 each!
And on the clearance rack I found a cleaning caddy for just $1.98! I've been wanting one for years but didn't want to pay full price.
