Henderson Hostess workers reflect on plant closure

This is very sad news because many have lost their jobs today due to the decision to close down.
The company had been struggling under the weight of an $860 million debt and soaring expenses tied to its labor force.  It's already been mentioned that the food products will probably be bought out by other food companies.

Kelly's Korner Show Us Your Life: Main Dish Recipes

I discovered this recipe during a Menu Plan Monday and it's been our family favorites ever since!
Korean Beef with brown rice

1 pound lean ground beef
1/4 - 1/2 cup brown sugar
1/4 cup soy sauce (I use low-sodium)
1 Tablespoon sesame oil
3 cloves garlic, minced
1/2 teaspoon fresh ginger, minced
1/2 - 1 teaspoon crushed red peppers (to desired spiciness)
salt and pepper
1 bunch green onions, diced (don't skip this!)

Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil. Drain most of the fat and add brown sugar, soy sauce, ginger, salt and pepper and red peppers. Simmer for a few minutes to blend the flavors. Serve over steamed rice and top with green onions.

Marcus' Simple Lasagna

I like to add fresh mushrooms and sauteed onions to 1 lb of hamburger and them to the pasta sauce!

1 26-ounce jar pasta sauce
2 30-ounce bags frozen large cheese ravioli, not thawed
1 10-ounce box frozen chopped spinach, thawed and squeezed of excess water
1 8-ounce bag shredded mozzarella
1/2 cup grated Parmesan

Directions Heat oven to 350° F. Coat a 13-by-9-inch baking dish with cooking spray and spoon in a third of the sauce.

Arrange 12 ravioli on top and scatter the spinach over them. Top with half of each cheese. Cover with another layer of ravioli and the remaining sauce and cheese.

Cover with foil and bake 25 minutes. Uncover and bake 5 to 10 minutes more or until bubbly.

Thanksgiving Kids Tables

I don't remember ever sitting at the kids table on Thanksgiving. But I sure wish I had after looking at these fun and creative table settings.

Here's just a few that I found on Pinterest. Enjoy!
I recently attended a live webcast hosted by Joyce Meyer. It was a Q&A about overcoming fear! It was a wonderful opportunity. And I truly hope she does one again soon.

Now, back to topic. Kelly's Korner shared the news that Melissa Taylor will be starting the Greater Online Bible Study on November 25, 2012. Just head to MelissaTaylor to sign up for the study! You'll find a link to purchase the book, Greater, has a 25% discount.

This online bible study has 15,000 participants. Isn't that amazing?! How did this event escape me?!

Fibromyalgia and the Brain: New Clues Reveal How Pain and Therapies are Processed

Fibromyalgia and the Brain: New Clues Reveal How Pain and Therapies are Processed

Excerpt from the press release:  According to research presented this week at the American College of Rheumatology Annual Meeting in Washington, D.C., pain experienced by people with fibromyalgia may be caused by a problem with the way pain stimuli are processed in the brain. Abnormal pain signal processing may also be related to a lack of responsiveness to opioids, a common class of pain relievers.

This is very important for chronic pain sufferers because it explains why some us don't get relief from opioids.  I'm holding out hope that the findings will lead to researchers looking for other ways to manage chronic pain that are not as costly, toxic and addictive for some.

We're Toast People Again!

My hubby came home on Sunday with a toaster! Whoo Hoo! He called me from Target saying he saw one and said "Buy it"!

People! Make Your Own Salad Dressings!

We eat a lot of salads in our household but only recently have I been toying with the idea of making salad dressing from scratch!
So I went on a quest for a homemade buttermilk ranch dressing, found this one, and prepared for the family. To my surprise Marcus said that it taste much better than the bottled ranch dressings. My husband love the taste but wondered if it would thicken up like the bottled ones.
And I finally found a ranch dressing that not taste delicious but doesn't give me a nasty reaction in my mouth!

Menu Plan Monday ~ November 12, 2012

It's finally gotten cold in Las Vegas! And we love it!

As a chronic pain sufferer I do find that I need to bundle up more than the hubby and son. (ex: daily scarf around the neck, winter socks with warm slippers) I find that the cold causes me to have additional joint pain. And I still love to take my daily walk!

Enough of that! Let's move on to this week's menu plan! Thank you to Organizing Junkie for hosting Menu Plan Mondays! Come join us.
chicken and dumplings
quick vegetable soup and make-your-own sandwich
baked ham, salad, quinoa
baked chicken, stuffing, corn
slow cooker ham and potato casserole~ I'm leaving out the stuffing

Baby! It's Cold Outside! Las Vegas

Can you believe we had our first freeze warning last night, in Las Vegas? It's even more difficult to comprehend when it was in the 80's last Monday!
hubby~Charles

But, since I'm from Portland, Maine we're not caught off guard. Mainers know how to be prepared for winter! We actually have coats, scarves, gloves, blankets for this time of year.
Me

We also love to layer. When I mention layering to those not familiar with it they always look at me weird. After days of 115 degree temps we were really looking forward to this!
