Betty Crocker Starlight Yellow Cake

I've been wanting to make a yellow cake from scratch for awhile but never seem to have all of the ingredients ready or just not feeling like baking. Well last night all the stars were in alignment! With Marcus creaming the butter we assembled our Starlight Yellow Cake!

And it wasn't as hard as we thought! I would highly recommend this recipe for the beginner.

The apartment smelled wonderful! And the cake taste delicious! No Marcus! I'm not burning a Buttercream Yankee Candle!

Starlight Yellow Cake ~

2 1/4 cups all-purpose flour

1 1/2 cups sugar

1/2 cup unsalted butter , softened

1 1/4 cups milk

3 1/2 tsp baking powder

1 tsp salt

1 teaspoon vanilla

3 large eggs

1.) Heat oven to 350 degrees. Grease bottom and sides of 2 round pans with margarine; lightly flour.
2.) Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour into pans.

3.) Bake 25-30 minutes, or until toothpick inserted in center comes our clean or until cake springs back then touched lightly in center. Cool rounds 10 minutes; remove from pans to wire rack. Cool completely, about 1 hour.

4.) I used a 9x13 pan 35 to 40 minutes. If you're using 9 inch pans 25-30 minutes

Which One Should We Choose For Our College Student? Kindle or Nook??

Our son starts college in 2 weeks. Some of his books will be digital so my husband and I wanted to buy him an eReader since many instructor ban laptops.

We're at a lost which one we should get so I thought I would ask. Which one do you have, what do you love or dislike about it?

  Edith is finally have her day as a bride!  Mary and Matthew are still bickering over his inheritance.  The family is looking at downsizing.  Lots of things happening at Downton Abbey, in episode 2.  We'll definitely be watching!

101 Cookbook: Caramelized Onion Dip Recipe

I made the Caramelized Onion dip over the weekend.

As usual I put my spin on the recipe.

I didn't use Fage Greek yogurt because I forgot to buy some so I used the additional portion of sour cream. I also added some celery salt to taste.

101 Cookbook suggest that the dip taste better at room temperature.

I served it with carrots and celery. My husband and I really enjoyed it.

I Received My French Press Coffee Pot Lesson Today!

I recently won and received a French Press Stainless Steel Coffee Pot, a lb of Stumptown Coffee Roasters ground coffee, 2 Ralph Lauren coffee mugs and a West Elm serving tray, from a Bailey's US Twitter party. While I was excited to win it I had no idea of how to make coffee in a French Press.

This morning, my darling husband, decided to show me how to use it! First I brewed a pot of water in our coffee maker.

Here's the following steps:

remove the lid/plunger assembly from coffee pot
Put a heaping spoonful of coffee into the pot
poured the hot water into the French Press
used a chopstick to stir the coffee.
replace the lid/plunger assembly back into the pot, wait 4 minutes for steeping
one hand on lid, other slowly pushing the plunger down
wait 30-60 seconds and pour your coffee!

The coffee taste smooth, not bitter and even smelled better! I'm now a big fan of the French Press Coffee Pot! Bye-bye coffee maker!

Overdose Deaths from Pain Medications Are Rising

Where's the line to treating pain and the abuse? That was a question asked by the host. My response to that is that there's no follow through from doctors. I did have a few doctors express concern but they didn't provide any other options to me.

After being totally disgusted with myself, with the help of my family and faith I quit!(3-4 months of withdrawals)

My hope is that because of this dialogue there will be more research and education in chronic pain.

This radio segment is definitely worth a listen for chronic pain sufferers and their families.

Menu Plan Monday ~ January 7, 2013

Did you have watch Downton Abbey, Season 3, Episode 1 on PBS last night?! My husband and I certainly did! And we weren't disappointed. I tried very hard to not read the many spoilers and recaps that are out there. (it's hard not to)

It's been a long time since we've had a TV program that we could enjoy watching together.

Clean Eating Recipes: Leftover Turkey Soup

As usual, I had to add my touch to this recipe. First, I did add some diced onion and celery leaves. Yum! The recipe called for sage, which I didn't have so we added salt, parsley flakes and Italian seasoning to taste. I also added some 2 cups of water and Rotelle noodles to the soup. And lots of turkey!

I love trying Pinterest recipes! Don't you?

It's Frosted Banana Cake and Tea With Our Downton Abbey!

I really wanted to have a slice of homemade cake and a cup of tea while we watch Downton Abbey tonight but my chronic pain level is higher then usual. So, the hubby and son stepped up to assemble and place the cake in the oven!

No Special Effects states that this is the easiest cake she's ever made. My guys totally agree!
