Fresh And Easy White Bean Salad

I've been a fan of Fresh & Easy Tomato Mozzarella with pesto for several years. It's a delicious addition to pasta and salads. This time I decided to add it to my white bean salad.

We just added some cracked black pepper and salt. Chilled it and serve. Delicious

This is my first time participating in Ramblings of a Suburban Mom's Thursday Thoughts. I really love her blog. If you're looking for the 101 on subscription boxes definitely check out her out.

This gal is so sick these last few days. I caught a cold bug, which is aggravating my chronic pain level. So for a distraction I've been watching lots of TV, like Real Housewives of Beverly Hills. Am I alone in thinking in this series the ladies have more parties and luncheons than the others?

When I won a DNA kit our son asked if he could have it. He's always wanted to have his DNA tested so I was thrilled to pass it on. Our son, Marcus, recently received his DNA results back from . The Ancestry Composition results came with some wonderful surprises. 88% Sub-Saharan African, 10.3% European, .05% East Asian and Native American and 1.3% unassigned equals 100% Marcus Berry.

They were able to trace his father's ancestors DNA to Northern Europe.(Denmark, Sweden, Norway) While mine was traced to Coastal Western Africa. We always knew he's just one terrific pot of stew. The DNA test kits are $99. If you're interesting in a DNA test, head to 23andme

It's amazing to see so many people participating in this year's Invisible Illness Week. I've been overwhelmed with the tweets, Facebook and blog posts but very inspired too.

Despite numerous skin infections, pain flareups, hair loss, and daily chronic pain, I choose to enjoy my life by focusing on the moments.

The cool thing about this menu plan is that they make terrific leftovers and make overs. Chicken dishes can be remade into salads or pasta dishes. Red beans can be served with eggs in the morning. That's why I love menu planning. Saves money while still offering my family tasty dishes.

1. What is your favorite fall activity?
I truly love taking walks with my husband in the crisp, fall air.

2. Do you follow a football team? If so, which one and why?
No, that's my husband's thing. But I will occasionally watch a game or 2 with him!

3. What is something fun about fall in your area?
That would be the ability to enjoy outside activities now that the temperatures are livable in Las Vegas. ex: wine tastings, First Friday, UNLV Rebel football games, charity runs/walks

4. What are your favorite fall staple outfits?
Oh my gosh. That's easy for this former Mainer! That would be a blazer, fitted long sleeve turtleneck, bootcut jeans and boots. I also love to wear scarves during this time of year. Of course, I have to wait a few months for cooler temperatures.

5. What things are his looking forward to most about this coming fall season?
I alway look forward to decorating our home with fall accents for the season and holidays. My husband and I are planning on participating in the Conquer Chiari Walk Across America on Sept. 21. A family friend is the organizer of the event, as well as suffers from Chiari.

6. What is your favorite fall holiday? Tradition?
While I love the fall season, we don't really celebrate the holidays or have traditions these days. My husband usually has to work. And now that our son is grown, working, he's got his own plans. ex: having Chinese takeout or pizza on Thanksgiving,
