Seared Pork Medallions With Avocado & Orange Salad over Farro

We made this Blue Apron recipe a few weeks ago. It introduced us to farro. The salad was so good our son wants me to make it again!

The combination of sliced avocado, orange and red onion really made this salad rock! Also, the vinigrette was really good!
