Monday Lunch: Southwestern Style Beef Stuffed Peppers

This recipe and ingredients was purchased from Blue Apron.

Changes: My husband and I prepared this meal together. He did the prep and chopping while I did the cooking. After filling 2 red bell peppers, we had enough filling for at least 5-6 more! That was okay because I just put it aside for leftovers.

This was a great dish. And we'll definitely be making it again..with extra bell peppers!
