Southwestern Style Beef Stuffed Peppers sounds like a winner. We've had previous stuffed red pepper recipes and really enjoyed them. I also like the idea of using brown rice, in this recipe. more nutritious.
Chicken Ba'nhi Mi Sandwich was delicious! I did make a few changes: only used 1/3 of the Ba'hi Mi seasoning. Mixed the red cabbage with the cucumbers and carrots. Used plain mayo on the sandwiches. There was enough of the red cabbage, carrot and cucumber to make some sandwiches the next day. I just sauteed boneless chicken thighs and bought some French bread.
