Blue Apron: Beef on Weck Sandwiches with Heirloom Potato Salad

Earlier this month, my husband and I enjoyed several delicious Blue Apron meals. The Beef on Weck Sandwich and Heirloom Potato Salad had to be our all time favorite!

The tartness from the whole grain ground mustard and sherry vinegar, in the salad dressing, on the heirloom potatoes was amazing! And the horseradish-spiced mayonnaise and peppery arugula on the Beef on Weck Sandwiches had us humming, in delight.

I would definitely attempt to make this meal again.
