Southern Shrimp & Grits: Hubby and I always wanted to give this recipe a try. We'll be making this recipe, for Saturday lunch.


Southwestern Style Beef Stuffed Peppers sounds like a winner. We've had previous stuffed red pepper recipes and really enjoyed them. I also like the idea of using brown rice, in this recipe. more nutritious.


Chicken Ba'nhi Mi Sandwich was delicious! I did make a few changes: only used 1/3 of the Ba'hi Mi seasoning. Mixed the red cabbage with the cucumbers and carrots. Used plain mayo on the sandwiches. There was enough of the red cabbage, carrot and cucumber to make some sandwiches the next day. I just sauteed boneless chicken thighs and bought some French bread.

Wednesday Lunch: Chicken Ba'nh Sandwich

Chicken Ba'nh Mi Sandwich inspired by Blue Apron recipe and ingredients.

I love the crunch from the carrots, English cucumbers and red cabbage. I used plain mayo and added some fresh cilantro. The chicken breast was dry rubbed with Ba'nh Mi seasoning, pan fried and sliced. This french bread really made this sandwich! Just toasted, in the oven for a few minutes.


I couldn't wait to take a bite! This sandwich was loaded with flavors and textures. Thanks Blue Apron for another delicious meal.

Thursday Thought ~ September 11, 2014



When I was growing up, there weren't many black models to be rooting for, but we did have Beverly Johnson. It was a thrill to see her on HuffPost Live today, talking about her 40 year Vogue cover anniversary. Can you believe she's 60 years old? She's so beautiful and graceful. And to think, I only have 8 more years till I hit 60! I hope I look half as good as her.



PYT, a burger joint in Philly posted this receipt to their Facebook page showing a $60 tab racked up by Eagles player LeSean McCoy. The receipt also shows that the running back is one stingy tipper: nope, not even close to 20% -- 20 cents to be exact.

And guess who came to the rescue? Charlie Sheen! He donated a $1000 tip.



It's not often that you hear from an actor, who won't say anything negative about an actor. Justin Long is one of them. I had a feeling I would like this guy.



The National September 11 Museum opened it's doors in May, earlier this year. Today it plays its first role in the annual ceremony at Ground Zero, which includes a reading of the victims' names. The event started at 8:46 am, the exact time that the first plane hit the north tower.

Sept. 2014: Invisible Illness 30 Things About Me


September 8 - 14th is Invisible Illness Awareness Week. If you are someone, who suffers from an invisible illness or has a loved one, stop by Invisible Illness Awareness website for more details, watch videos and read other Invisible Illness participants' blog post.

1. The illness I live with is: Fibromyalgia, Myofascial Pain Syndrome, Compressed Cervical Discs, Herniated Lumbar Discs, Hidradenitis Suppurativa, Major Depression

2. I was diagnosed with it in the year: 2000

3. But I had symptoms since: Depression started when I was in my teens.

4. The biggest adjustment I’ve had to make is: Adapting for my lost of range of motion, memory, and hand strength. Increased pain levels interfere with daily functions.

5. Most people assume: I'm healthy.

6. The hardest part about mornings are: Getting dressed has gotten more difficult due to the hand pain, severe pain in my lower back. Sometimes, I experience skin irritation from synthetic fabrics. (hives, rashes)

7. My favorite medical TV show is: I don't have a favorite medical TV show.

8. A gadget I couldn’t live without is: my lobby upright dust pan ~no need for bending to sweep up dirt

9. The hardest part about nights are: relaxing my 'overstimulated' system enough to fall asleep

10. Each day I take 6 pills & vitamins. (No comments, please)

11. Regarding alternative treatments I: I exercise, watch what I eat~reduce processed foods, mediation, listen to music.

12. If I had to choose between an invisible illness or visible I would choose: Neither.

13. Regarding working and career: As of 2010, I am no longer working.

14. People would be surprised to know: I was once committed to a mental institution.

15. The hardest thing to accept about my new reality has been: Sometimes, it's difficult to answer, "What do you do"? But, it's getting easier. I usually say, "I'm a housewife"!

16. Something I never thought I could do with my illness that I did was: Ride a bike. Yes, I can do it for a quick trip around the parking lot.

17. The commercials about my illness: They don't apply to me.

18. Something I really miss doing since I was diagnosed is: Having more energy to get things done in the day.

19. It was really hard to have to give up: Actually, it hasn't been that difficult to give up things thanks to continuous counseling and adapting to my physical limitations.
20. A new hobby I have taken up since my diagnosis is: swimming.

21. If I could have one day of feeling normal again I would: Banded the word, Normal! Really? What's normal? This is my new normal.

22. My illness has taught me: I can adapt. I can change. That I do like me. To stop blaming myself.

23. Want to know a secret? One thing people say that gets under my skin is: When they start off with, "My friend, sister, brother has the same thing as you and they don't..." Urg! I just phase out till they stop talking, smile, nod, and wish they a good day!

24. But I love it when people: You have a wonderful smile.

25. My favorite motto, scripture, quote that gets me through tough times is: 'My grace is sufficient for thee; for my strength is made perfect in weakness". 2 Corinthians 12:9

26. When someone is diagnosed I’d like to tell them: I'm sorry to hear that.

27. Something that has surprised me about living with an illness is: How many different forms of chronic pain conditions there are.

28. The nicest thing someone did for me when I wasn’t feeling well was: My husband took the day off, made me lunch and we watched a funny movie together.

Menu Plan Monday ~ September 8, 2014

Hubby and I spent this weekend, at home, relaxing and watching some of our favorite Netflix programs. I also caught up on my Coronation Street and The Only Way Is Essex episodes, on Hulu. We made some time to shampoo the carpets. Well, he did the hard work, while did the housework.

Sunday meant it was time for some football. My husband's beloved Dallas Cowboys lost...terribly. Even I feel they need to consider a new head coach and I'm not a football fan. (I just married one)

Sunday Dinner: Hamburgers and French Fries

In honor of NFL Sunday, I decided to make hamburgers and French fries for dinner. No pre-made hamburgers or frozen fries. We make our own hamburger patties and hand cut our fries.

The results: Despite Dallas Cowboys losing to the 49ers, hubby enjoyed his dinner.

One of my favorite spiritual leaders to visit the HuffPost Live studios is Bishop T.D. Jakes. His voice commends your initial attention but his message will full attention! When he stopped by, to chat with Marc Lamont Hill he shared the message of compassion and understanding for our fellow man.

I pray that I start my week with less judgement. May I have grace and forgiveness, in my heart for my fellow man.

A Complete Waste of Makeup

1. 5 Things you want us to know about you: 1. I have to have a cup of coffee, in the morning. Okay, maybe 2 cups but that's my limit!
2. I've only lived with one guy and that's my husband.

4. If you listen carefully, you'll catch a bit of a Southern Maine accent. When I ask for a glass of water, at a restaurant, my son usually says, "Let me translate" to the confused waiter or waitress.

5. I'm a big "Law & Order" fan. I'm not talking about SVU but the original one! I even had the "Law & Order" theme song as my ringtone for awhile. These days, I'm still able to get my 'fill' by watching episodes on Netflix. "Go get 'em Lenny Briscoe"!
