Walk Across America, Sat., Sept. 19th, Las Vegas

This year my husband and I will be participating in the Walk Across America, for Chiari Malformation, in Las Vegas. Did you know that Chiari Malformation is a serious neurological disorder affecting more than 300,000 people in the USA?

The Conquer Chiari Walk Across America is a series of local awareness and fundraising walks held on the each year, in various states and locations. Proceeds from the walk and donations will be used to fund Chiari research, education and awareness programs.

The Las Vegas walk will be hosted by a family friend, who also suffers from this disorder.

Korean Beef with Brown Rice

1 pound lean ground beef
1/4 - 1/2 cup brown sugar
1/4 cup soy sauce (I use low-sodium)
1 Tablespoon sesame oil
3 cloves garlic, minced
1/2 teaspoon fresh ginger, minced
1/2 - 1 teaspoon crushed red peppers (to desired spiciness)
salt and pepper
1 bunch green onions, diced (don't skip this!)

Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil. Drain most of the fat and add brown sugar, soy sauce, ginger, salt and pepper and red peppers. Simmer for a few minutes to blend the flavors. Serve over steamed rice and top with green onions.

2 cups white flour
3 tsp baking powder
1 tsp salt
1 cup milk
Deep hot oil in frypan or fryer

Pancakes From Scratch - Betty Crocker Big Red Cookbook

I'm a huge fan of pancakes and love making them from scratch.  Here's the recipe that I've been using for years courtesy of Betty Crocker's Big Red Cookbook.

ps I don't add the sugar and ues 2% fat free milk.  I do let the recipe sit for few minutes to thicken.  And when including fruit I serve it at the table.  I don't like to mix it in. 

1 large egg
1 cup all purpose or whole wheat flour
3/4 cup milk

1 tablespoon granulated or packed brown sugar
2 tablespoons vegetable oil
3 teaspoons baking powder
1/4 teaspoon salt

margarine, butter or shortening for the griddle or skillet.  I use margarine...we don't like the taste of shortening and butter can sometimes burn

Beat egg in medium bowl with hand beater or whisk until fluffy.  Beat in remaining ingredients except butter just until smooth.  For thinner pancakes, stir in additional 1 or 2 tablespoons of milk.
